Ingredient:

  • Strawberries: 500g (stem removed)
  • Granulated sugar: 400g
  • Lemon juice: 25g
  • Water: 50g

How to make strawberry Jam:

Day 1: Pre-Processing and Marinating Strawberry

  • Wash the strawberries under clean running water. Wash each fruit gently the freshness of the strawberries.
  • Place in a basket to drain. Use paper towels to pat dry. Do it gently so that the strawberry keeps its in nice shape.
  • Remove the stalks off with a knife and place all the strawberries in a large bowl.
  • Add granulated sugar, lemon juice and water and mix well.

 

  • Using a piece of parchment paper (baking type), cover the top of the strawberry bowl. This step is to prevent air from entering. Then cover the mouth of the bowl with cling film. Put in the refrigerator overnight.

Day 2: First Simmering of Strawberry Jam

  • The next day, put the strawberries in a thick pan and bring to a boil. Skim the foam on surface.
  • Remove the pan from the stove. Pour the mixture into the bowl. Cover the surface of the mixture with parchment paper. At this time, there is no need to use cling wrap anymore. Cool and store in the fridge overnight.

Day 3: Second Simmering of Strawberry Jam

Sterilize glass jars containing jam:

  • Boil 1 pot of water.
  • Put the jar of jam into sterilization in boiling water for about 2-3 minutes, turn off the heat.
  • Take out the jar, drain and dry.

Second Simmering of Strawberry Jam

 

  • Take out the bowl of strawberries in the refrigerator
  • Remove the strawberries and keep them separate.
  • Pour the sugar syrup into the pan. Bring to a boil over medium heat. During the cooking process, remember to skim off the foam to make the syrup clear.

  • When the syrup is thicker. Add in the strawberries. Bring to a boil again for 5 more minutes.
  • Use a spoon to scoop a small amount of strawberry juice onto a plate. If the shape of the jam drops stays clear, the jam is done. Turn off the stove.

  • Immediately pour strawberry jam into sterilized jars. Close the lid of the jar and screw it tight.
  • Turn the jam jar upside down and let it cool completely. Store in the refrigerator for longer shelf life.
