Homemade Kombucha From A-Z: Grow Scoby, Kombucha Tea and Make Strawberry Lime Kombucha

 

Homemade Kombucha not only easy but also very healthy. Kombucha is thought to originate in China or Japan. It is a fermented tea that has been consumed for thousands of years.

Not only does it have the same health benefits as tea — it’s also rich in beneficial probiotics.

  • The drink is rich in tea polyphenols and acetic acid, which have both been shown to suppress the growth of undesirable bacteria and yeasts.
  • Kombucha has been shown to improve “bad” LDL and “good” HDL cholesterol levels in rats. It may also protect against heart disease.
  • A study in diabetic rats found that kombucha slowed down the digestion of carbs, which reduced blood sugar levels. It also improved liver and kidney function
  • In test-tube studies, kombucha helped prevent the growth and spread of cancerous cells due to its high concentration of tea polyphenols and antioxidants

Tips before you start homemade Kombucha Scoby. For those who make for the first time

  • Tea: Using Black Tea to grow Scoby. Don’t use decaft tea.
  • Always use clear glass jar. Don’t use plastic or color jar.
  • When you have big and strong Scoby, you can use green tea to make kombucha tea.
  • Using organic sugar is the best to grow Scoby. Don’t use honey. Honey can contain botulism bacteria that, when grown exponentially as bacteria and yeast tend to do in kombucha, can be dangerous.
  • Don’t Stir or touch scoby for the first few weeks of growing. If it floats sideways or sinks, leave it! It’s just doing it’s SCOBY thang.
  • Never throw your SCOBY away! Share the kombucha love by gifting it to a friend

Homemade Kombucha

Stage 1: Growing new Homemade Kombucha Scoby

You will need:

  • Black tea: 4 teaspoons (20g)
  • Sugar: 8 tablespoons (120mg)
  • Water: 1 liter
  • Store-bought Kombucha: 250ml

How to Make Kombucha Scoby:

  1. Bring 450ml of water to a boil. Turn off the heat and add the tea bags in. Wait for 10 minutes.
  2. Take out the tea bags.
  3. Add 120g of sugar, stir until dissolved.
  4. Let the tea mixture cool down. About 36*C is right temperature
  5. Add 250ml of Kombucha. Stir well
  6. Pour the mixture into the glass jar. Cover the jar with a cheese cloth.
  7. Store in a cool and dark place for 4 weeks.

  1. From the 2nd week you can see a thin layer of Scoby has formed on the tea. However, do not touch too hard.
  2. By week 4th, this Scoby layer is much thicker and stronger. So you have successfully raised Kombucha mother Scoby.
  3. Pour the Kombucha juice into another jar. Save 250ml in the jar with the Scoby to continue the fermentation process.
  4. The Kombucha tea you just made will be more acidic than usual. However, many nutrients. Store in the refrigerator. You can add sweeteners like sugar or honey to drink.

Stage 2: Homemade Kombucha tea

This recipe will make about 1.5 liters (~6cups) of Kombucha tea.

You will need:

  • Black tea: 6 teaspoons (30g)
  • Kombucha (scoby): 1 Scoby
  • Sugar: 9 tablespoons (135g)
  • Water: 1,500l (~ 6cups)

How to make Kombucha Tea:

Put Scoby in Black Tea for 7 days

 

  1. Boil water, turn off the heat, add black tea and wait for 10 minutes. Then filtering the tea.
  2. Put the sugar in. Stir until dissolved. Then let the tea cool down to about 36*C.
  3. Pour the tea into the glass jar. Add Kombucha Scoby.
  4. Cover the the jar with a cloth (Cheese cloth).
  5. Leave to ferment at room temperature for 5-7 days. Usually on the 5th you should try the sour taste. If desired, you can stop fermenting on the 5th day. If not enough, leave until the 7th day.

  1. Strain the Kombucha tea into another glass jar. Leave in the jar about 250ml of Kombucha tea to continue grow Scoby.
  2. The Homemade Kombucha tea should be kept in the refrigerator to drink gradually.
  3. When you want to make Kombucha tea again, just go back to step 1 of Part 2

Making Strawberry Lime Kombucha: Flavoring Your Homemade Kombucha Drink

The Drink is Full With Strawberry Aroma

You will need:

  • Kombucha tea: 1 litre (4 cups)
  • Lime: 2-3 limes
  • Strawberry: 200gr
  • Honey: To your taste

How to make Strawberry Lime Kombucha drink

  1. Cut the lime in half and squeeze the juice
  2. Strawberries: Use 150g puree. The remaining 50g, chopped or cut into pieces for decoration.
  3. Prepare 1 glass container: Mix 1litre (4cups) of Kombucha tea with lime juice, strawberry puree and honey. Mix. Cover and store in the refrigerator.
  4. When drinking: Put the chopped strawberries in a glass, Pour the Kombucha mixture in. Add ice if you like.
  5. The Kombucha Drink is full with Strawberry aroma, attractive pink color, sweet and sour taste. Very delicious.
